Guest Recipe: Thengai Araitha Kuzhambu (Coconut ground gravy)

Kuzhambu (or Kulambu), is comparable to Sambar, however a little thinner in the gravy. Tamil Nadu has loads of sorts of Kuzhambu to attraction each vegetarian and non-vegetarians.

Thengai Araitha Kulambu

Ingredients

(tsp = teaspoon)

To be fried and floor to a paste:

2 Tsp oil for frying the under elements earlier than grinding:

1/2 tsp Fenugreek seeds
6 dried pink chillies
10 pods small onions
one sprig curry leaves
1 tsp uncooked rice
one cup grated coconut (fresh or dried desiccated)

For the gravy:

1 tsp mustard seeds
1/2 tsp fenugreek seeds
10 pods of small onions
one sprig curry leaves
juice extracted from half of a lemon measurement tamarind
1/2 tsp turmeric powder
a pinch of jaggery (for bettering the taste)
salt to taste
3tsp oil

Method

For making the floor paste:

Put oil in a pan and add fenugreek seeds and crimson chillies.
Add the onions and curry leaves along.
Let the onions to fry nicely and as soon as performed add the rice and in 2nd the rice would fry up properly change off the furnace and add the grated coconut.
Let it fry in the warmness of the pan.
Once the substances cool down grind it all collectively and maintain aside.

Preparing the gravy:

Put oil in a sauce pan and add the mustard seeds and fenugreek seeds.
Let it mood and then add alongside the onions and curry leaves and fry until done.
Add turmeric powder and tamarind extract and two cups of water and let it boil till the uncooked odor of tamarind leave. Now add the floor paste, salt and jaggery.
Bring it to boil. Remove structure furnace as soon as done.

This nice goes with undeniable rice, Idly or Dosa
